Simple Healthy Pancake Recipe

Dairy free, Wheat free, 3 ingredient, 174Kcal delicious healthy pancakes!


  • 2 Eggs
  • 1 Banana
  • 1 Teaspoon Coconut Oil
  • Dash of Cinnamon (optional)
  • 1 Tablespoon Oats (optional)
  • 1 scoop protein powder (optional)


  • 0% Fage Greek Yoghurt 

  • Fresh Berries
  • Almond/Peanut Butter
  • Homemade granola (see recipe here
  • Whatever you want- You're having a banana and eggs for breckie- Go Wild! :P


  • Mash the banana up in a bowl and crack in the 2 eggs. Mix with a fork.
  • Add in the optional ingredients.
  • Mix for 2-3 minutes using a handheld whisk or a fork, until the mixture becomes 'fluffy'.
  • Heat coconut oil in a non-stick frying pan.
  • Once hot, drop about 1.5 Tablespoons of batter on the pan. Cook until the edges look dry and bubbles begin to form on the center or sides, about 1 minute. Flip and cook on the other side until cooked through, about 2 more minutes.
  • Garnish and enjoy!!

*If I am making these before or after a workout, I add in chocolate cookie protein powder to make chocolate pancakes and a tablespoon of oats.
